Dorothy's Potato Salad

Ingredients

  • 2 lbs gold (preferred) or red potatoes
  • 1/2 cup mayonnaise
  • 1/4 cup yellow mustard
  • 2 Tbsp Dijon mustard
  • 1/2 cup dill pickle relish or chopped dill pickles
  • 1 Tbsp dill pickle juice (or more to taste)
  • Salt, black pepper, paprika, and cayenne pepper to taste

Directions

  1. Peel and cube the potatoes, put them into a pot, and cover with about an inch of water.
  2. Bring to a boil and cook for 8-10 minutes.
  3. Drain and run the potatoes under cold water to stop the cooking.
  4. Transfer the potatoes to a large bowl and add the pickles.
  5. In a large measuring cup or bowl, whisk together the mayonnaise, yellow and dijon mustards, and pickle juice. Add seasonings to taste.
  6. Once you have the dressing seasoned to your liking, pour it over the potatoes and pickles and gently stir to combine.
  7. Chill until ready to serve.
