Dorothy's Potato Salad

Ingredients
- 2 lbs gold (preferred) or red potatoes
- 1/2 cup mayonnaise
- 1/4 cup yellow mustard
- 2 Tbsp Dijon mustard
- 1/2 cup dill pickle relish or chopped dill pickles
- 1 Tbsp dill pickle juice (or more to taste)
- Salt, black pepper, paprika, and cayenne pepper to taste
Directions
- Peel and cube the potatoes, put them into a pot, and cover with about an inch of water.
- Bring to a boil and cook for 8-10 minutes.
- Drain and run the potatoes under cold water to stop the cooking.
- Transfer the potatoes to a large bowl and add the pickles.
- In a large measuring cup or bowl, whisk together the mayonnaise, yellow and dijon mustards, and pickle juice. Add seasonings to taste.
- Once you have the dressing seasoned to your liking, pour it over the potatoes and pickles and gently stir to combine.
- Chill until ready to serve.
